Salted Caramel Banana Bread

Life through food coloured glasses

Ingredients:

2 cups of dates

2 bananas

2 teaspoons of vanilla

1 teaspoon of salt

2 eggs

90g butter

1 cup of Gluten free flour

1 teaspoon of cinamon

2 teaspoons of baking powder

a handful of pecans for decoration

 

 

Directions Base:

  1.  

  2. Mash the banana until smooth. Using beaters beat in the butter on high. Add the eggs and wip until light and froothy about 3 minutes. Add yoghurt and honey beat for another 2 minutes.

  3. Fold in flour, fibre, cinamon, powder, nuts and dates.

  4. Pour into a greased and lined small loaf tin.

  5. sprinkle pepitas on the top I like to add a sprinkling of brown sugar on top.
     

  6. Add your dates, cocoa powder, vanilla and cinnamon. Process until blended. 
     

  7. Cook for 35 minutes at 180

Makes about 10 slices
