Paleo Anzacs (Hazelzacs)

A great friend of mine Amanda recently posted a pic of some yummy paleo biscuits on her instagram account. Amanda is an amazing mum of three kids who loves her family and constantly makes sacrifices so that her little family is whole and complete, healthy and loved. I am totally inspired by how Amanda juggles the demands of being a mum, having fun, keeping fit, being a supportive wife and working for her husband's business. She is a very special person and I was delighted to try her favourite biscuit recipe. The original recipe was by Teresa Cutter from the Healthy Chef . I did tweak a few ingredients as hazelnut meal was on sale and cheaper than almond meal so I am nick naming them Hazelzacs. In this version I doubled the recipe  because I love making big batches of goodies and sharing them with my friends. I also switched almonds for hazelnuts which were equally delicious so work with what you have and or what's cheaper.

Paleo Hazelzacs

Life Through Food Coloured Glasses

Ingredients:

2 cups (100 g) Hazelnut meal (ground hazelnuts)

1 cup (100 g) pepitas

1 cup (100g) flaked almonds

2 cup (75 g) desiccated coconut 

1/2 cup honey

1/2 cup (120 ml) coconut oil

1 teaspoon bicarb soda

2 tablespoon water

2 teaspoons of vanilla extract

 

Directions:

  1. Combine hazelnut meal, flaked almonds, pepitas and coconut.
     

  2. Combine honey and oil into a small pot and heat gently.
     

  3. Mix the bicarb and water then pour into the honey pot and mix until it starts to froth.
     

  4. Pour into the dry nut ingredients and mix through until combined.  Add the vanilla and a little water a teaspoon at a time if needed to combine which will help them stick together.
     

  5. Take a teaspoon of mixture and form into 60 cookies. Unlike traditional anzacs these don't spread out as much so I rolled mine into little balls and then flatened them with a fork.
     

  6. Bake in a low pre heated oven 120 C (248 F)  for about 30 minutes until golden.

Variations

You could really use any ground nut for this recipe and change the almonds and pepitas for any nuts or dried fruit you like.
